I have been a regular diner at the Brighton Hilton Metropole for five years and strongly disagree with almost every aspect of David Edward's review of its restaurant (ahead, September 6).

I have always found the service to be of a high standard and levels of hygiene first class. The carvery is always excellent and there is a good selection of other dishes.

The wine is comparable to other establishments and it is to the Hilton's credit it has retained the beautiful chandeliers and the Victorian charm of the decorations. Perhaps Mr Edwards should patronise Harvester-style restaurants in the future, as he obviously doesn't appreciate the finer things of life.
