I recently found a recipe in the 'Olio' cookery book for a cake called a Brighton Sandwich. The ingredients are half a pound of flour, two oz of butter, two oz of lard, one egg, a pinch of salt, a pinch of baking powder, two oz of sugar and raspberry jam. The cake is baked in two halves with raspberry jam in the middle.
We enjoyed the cake very much. However, do any readers know the source of this cake and whether or not it does originate in Brighton?
The book is dated 1928. I also found the recipe in a Cannon cookery book, first published in 1932, but haven't seen it in any modern books.
