The 24-year-old University of Sussex graduate denied kissing and indecently touching the teenager in Burger King in North Street, Brighton, on January 8.
The court heard the security guard, of Lower Church Road, Burgess Hill, escorted the 18-year-old to the toilets after she arrived at the restaurant alone.
Greek Kopsidis, who also teaches piano, has lived in the UK for almost six years.
Judge Charles Kemp discharged the jury after they failed to reach a majority verdict. A juror was also discharged on Thursday after falling ill.
Prosecutor Jeremy Gold indicated the case would be relisted for the New Year.
