Having been to probably most of the pubs and clubs in the Brighton area, it seems quite obvious to me why people put parties on in unused buildings.
Some clubs charge in excess of £15 to get in, with a pint or bottle of lager costing around £3. A lot of people cannot afford this.
The organisers of these parties often do not charge anything to get in, or only ask for a small donation to cover costs.
