GARY Edwards trained at the prestigious Ecole Lenotre bakery school in Paris and rose to become head baker at top London hotel Claridges.
So it may come as a surprise to see he now specialises in baking on Bognor seafront, after spotting a hole in the market.
But his success proves that while croissants and pain du chocolat may seem more sophisticated, sometimes you just can't beat a simple sticky doughnut.
