Former butcher Keith Shearing has given up meat to open the Gardenia vegetarian restaurant in St James's Street, Brighton.
Keith is convinced there is a trend away from eating meat and into veggie food, which he intends to encourage.
He is so committed to the notion that being vegetarian is better for your health he is prepared to steak his reputation on it.
