Brighton and Hove has a vast array of restaurants, cafes and takeaway establishments and food hygiene standards are very important for all clientele (The Argus, June 19).

The food industry has flourished in Brighton and Hove and Sussex as a whole.

Food poisoning is the biggest threat to the industry and consumer and food hygiene must be of the highest priority at all times.

Ecoli 0157 is a dangerous bacteria and, if contracted, can cause kidney failure, and even kill in some cases.

Although there has never been a case in Brighton and Hove, great care has to be taken to keep ecoli out of the city.

There have been cases of poor hygiene in some establishments leading to Brighton and Hove City Council taking about ten establishments to court, where various penalties were imposed.

Food hygiene is important in our homes as well and the council's environmental health team gives out advice not only to commercial establishments but to private householders as well if required.
