The driver of the car towing the burger van escaped the crash and ran off leaving the scene of the accident on the A259 Roundstone bypass near Angmering.
The accident happened at about 4.25pm, just past the Haskins Garden Centre, and blocked the eastbound carriageway of the busy route.
Witnesses described how the van narrowly avoided a boy walking nearby as it crashed.
Fire crews from Worthing and Shoreham attended to make two gas cylinders in the van safe before efforts were made to move it.
By 6pm emergency crews had managed to re-open one lane on the eastbound carriageway although traffic was still heavy.
Sussex Police spokesman confirmed officers were still looking for the driver of the car.
