A popular Thai restaurant with its roots in Sussex has launched its new summer special menu - with salad and seafood high on the list.

Chefs at the Giggling Squid in East Street, Horsham, have created four new menu items perfect for the long, balmy evenings.

New summery drinks will also accompany the dishes - such as the new sparkling Hugo cocktail, which includes prosecco with elderflower liqueur, soda and mint.

The new menu starts with a range of light salads.

A spokeswoman for the restaurant said: "There’s the vegan Thai Garden Salad bursting with crunchy veggies and a zingy lemongrass and lime dressing, or our Chicken and Prawn Salad with plump juicy prawns, Thai minced chicken and greens."

For the main course, diners can have a sea bass with Thai herbs and greens - placed alongside mushrooms and green beans, or a vegan sunshine noodle bowl.

The spokeswoman described the dish as: "a light but flavourful bowl of rice noodles with pak choy, tofu, Tenderstem broccoli and a delicate coconut broth."

The new Hugo cocktail is also on the menu along with Aperol Spritz and an alcohol-free Sweet Jungle Colada.

The Giggling Squid was founded by husband and wife Andy and Pranee in 2002, opening up their first site in Market Street, Brighton - but it was only in 2009 that the brand was formed and they expanded to their second location in Hove.

Since, the couple have opened up dozens of restaurants up and down the country serving their unique "Thai tapas" menu.
