Local producers are centre stage at a newly transformed hotel.

Situated a stone’s throw from Brighton, The White Horses officially opened its doors this week following a two-year multimillion-pound revamp.

The first property from Everly Hotels Collection, the Rottingdean hotel offers 32 guestrooms and bespoke suites and a new bar and restaurant complete with outside terraces featuring spectacular sea views.

Walking into the hotel, you feel as if you have been transported away from the UK.

The establishment’s location right next to the sea without the interruption of a road in between offers a tranquil escape for those visiting the area who do not want to stay amid the hustle and bustle of the city.

You can tell Everly has taken inspiration from the sea and the building’s 1930s heritage.

The décor is bright and breezy with dark panelling and Art Deco features.

Comfortable and spacious rooms from classic doubles to superior balcony rooms and a selection of suites are individually named to celebrate local landmarks and folklore.

The new menu is also a celebration of Sussex.

In-house chefs and mixologists are focused on sourcing fresh, quality and innovative ingredients that offer seasonal classics with a twist inspired by the coastal location.

The bar’s new discovery bar will feature a new local producer every two to three months and will see the tipple turned into its very own cocktail.

Spirits and wines from the Bolney Estate and Spirit of the Downs are just some of the producers on offer.

The breakfast, lunch and dinner menus let regional and British produce take centre stage, showcasing flavours, ingredients and inspiration from the sea. The restaurant's signature seafood platter adds theatre to the dining experience.

Highlights of the hotel’s sample menu are the tender lamb rump with a buttery and crispy layered potato cake, the warm Irish soda bread with South Downs butter and dips, the zesty fillet of beef carpaccio and the refreshing Isle of Wight heritage tomato salad.

As a result of the multimillion-pound investment, 40 new jobs have been created.

Guests are also able to explore further with The Little Store in reception, fully stocked with local items from produce and handcrafted art to gifts, including candles, toiletries and seaside essentials.
