A hotel has launched two new menus.

The Grand hotel on Brighton seafront has revealed its new grand afternoon tea menu, plus a seasonal all day dining menu at its restaurant, Cyan.

Served in the Victoria Terrace and Lounge which overlooks Brighton’s seafront, the latest afternoon tea menu will include a line-up of savoury snacks and freshly made sandwiches, including a pork and leek sausage roll in a buttery pastry, caramelised red onion and goats cheese quiche, a Scottish smoked salmon sandwich with dill crème fraiche, and a Burford Brown egg mayonnaise sandwich with cress.

The afternoon tea menu will also have a selection of mini cakes, pastries and homemade scones, which include a dark chocolate delice, a classic lemon meringue tart and both plain and sultana scones served with clotted cream and Tiptree strawberry preserve. There will also be a selection of blended leaf tea and world-renowned blends and infusions to choose from.

Cyan’s new menu features a range of seafood, meat from the grill and sides and starters. New starters include crispy squid with parmesan, lemon and parsley and sriracha mayo, as well as handpicked crab served with avocado, mayo, rye toasts and a fennel and apple salad.

Diners can order various seafood and meats from the grill including a 28-day aged ribeye, thyme-roasted chicken, roast monkfish and lobster, which come with cherry vine tomatoes and watercress, plus a choice of side dishes, with the inclusion of fries, onion rings, and tender stem broccoli.

The chef’s classics offer a range of meat and seafood dishes, including slow cooked beef short rib with bok choy, charred corn, shitake mushrooms and tempura spring onion, seafood risotto served with white wine, garlic, dill and lime, plus a lobster and salmon burger with Marie rose sauce and fries.

The new menu at Cyan will also have a collection of desserts, including a salted caramel chocolate tart with yoghurt gelato and cherry purée, mango and passionfruit cheesecake with coconut, honey crumble, candied pineapple and compote, plus a classic strawberry and raspberry Eton mess.

The restaurant’s team of talented mixologists have also introduced some seasonal cocktails to set the scene for summer, including a watermelon spritz, pineapple daquiri and Kerry sour.

Classics such as a negroni and a Manhattan can also be found on the menu. An extensive wine list comprised of both alcoholic and non-alcoholic options will be available to diners.
