A fine dining restaurant has been added to a prestigious guide of the best restaurants and hotels in the UK.
Dilsk, in Brighton, was chosen as one of the Michelin inspectors' favourite new restaurants last month.
The modern British establishment was one of 12 restaurants to be added to the Michelin Guide Great Britain and Ireland in August.
The Michelin Guide described the restaurant as “intimate and slightly moody”.
“Visit this intimate and slightly moody restaurant inside the Drakes Hotel and you will likely be treated to some of the delicious, red-brown seaweed – more commonly known as dulse – after which the restaurant is named,” it said.
“Both the short and full tasting menus on offer include colourful dishes that are the epitome of modern British cuisine, like local Fox Acres chicken with asparagus, black garlic and morels.
“The roster of well-chosen wines offers less common choices that complement the food well.”
