A flagship hotel entertained guests with spring cocktails on its newly refurbished bar and terrace.

Tastes from the Hilton Brighton Metropole’s freshly decorated Waterhouse Bar and Terrace were served up to spectacular sea views.

Executive chef Peter Buckingham has joined forces with bar manager Nick Heasman to create perfect pairings and bring together delicious grazing plates, sumptuous afternoon tea and taste-tingling cocktails.

Hotel general manager Howard Lewis said: “We have a superb new team and we aim to offer tea by the sea in style, with an exciting menu and beautiful surroundings, including new heaters and parasols to enjoy our unique sea view terrace.

“The Waterhouse Bar & Terrace offers just the place for business people, ladies who lunch and families to enjoy the most fashionable afternoon meal, sliding gently into cocktail hour and watching the sun go down on Brighton’s seafront.”

The new menu boasts Hailsham lamb from Ashdown Farm, mackerel caught off Hove and crushed Brighton Rock for a crunchy cheese cake.

Cocktails include white wine and pineapple Brighton Rocks, the limey Sussex Mule and gin-based Blackdown Bramble.

Hilton Brighton Metropole is donating £1 for every afternoon tea sold to Chestnut Tree House, Rockinghorse and Whitehawk Inn.
